Research Interests

My research focuses on foodomics, the use of modern analytical techniques, such as ultrahigh performance liquid chromatography-mass spectrometry (UHPLC-MS), and gas chromatography-mass spectrometry (GC-MS), to study food macro-, micro-, and phyto-nutrients, their identity, diversity, and changes during food processing. The ultimate goals of my research are to explore nutrient-balanced food sources for human health, and to promote a sustainable food system by finding value in food industry byproducts.
